Spicy Shredded BBQ Chicken Sandwich – Instant Pot Recipe
Living in Texas, it’s hard to avoid BBQ. In fact, it’s hard to compete with BBQ restaurants but that doesn’t stop me from trying! I’m always amazed at how tender and juicy chicken is when I cook it in the instant pot, so naturally, whipping up a few bbq recipes now and then has a favorable outcome in our house! This week, we had a delicious spicy shredded bbq chicken sandwich that didn’t last long. If that sounds like something your family may enjoy, you’ll want to give this recipe a try!
Here’s What You’ll Need:
Ingredients for Spicy Shredded BBQ Chicken Sandwich
- 1 lb frozen chicken thigh or breast
- 1/2 cup chicken broth or water
- 1 1/2 cups spicy BBQ sauce
- Hamburger buns
- salt and pepper to taste
Preparation:
- Pour water into your instant pot and place chicken inside.
- Season chicken with salt nad pepper then coat with 1/2 cup of BBQ sauce.
- Seal Instant Pot and cook on high pressure for 12 minutes.
- When pressure cooking is complete, allow 10 minutes to naturally release then manually release.
- Turn instant Pot to saute -low and pout the remaining BBQ sauce into the pot. Stir and shred the chicken as it sautes for 3-5 minutes. Sauce will thicken.
- Remove and serve on toasted bun!
Toasty Chicken Sandwich Bun Preparation
We love a good toasty bun no matter what’s being served. There’s just something about a bun straight from the ven that makes everything taste better somehow! I set my oven to broil just before I am ready to serve up the sandwiches and pop the buns in the oven for 2 minutes on the center rack.
Depending on how spicy your family likes their shredded bbq chicken sandwiches, you can coat the buns with a layer of your spicy bbq sauce or your mayo. Either way, they’ll love the added touch the toasted bun gives to the chicken sandwich!
