Instant Pot Chicken Pot Pie Soup
We finally had a few chilly days here in Texas and it was amazing. I took full advantage and broke out the soup recipes while I had the chance. On one particularly cold, drizzly day, it just felt right to make a piping hot creamy chicken pot pie soup. It’s one of those recipes that tastes great no matter how thick or thin you like your soup base. The medley of vegetables is so healthy and satisfying, while the tender chunks of chicken really hit the spot. We seem to like the thicker, creamier consistency for colder days but I highly recommend trying every stage in between (if you’re a soup lover like me)!
Here’s What You’ll Need for Your Instant Pot Chicken Pot Pie Soup
Ingredients:
- 3-4 boneless, skinless chicken thighs (breasts work too but we love dark meat)
- 2 cups whole milk
- 1 can cream of mushroom
- 3 cups chicken broth (add an extra cup of you prefer thinner consistency)
- 2 large potatoes, peeled and cubed
- 1 small can peas
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 ½ tsp salt
- 1 ½ tsp pepper
- 1 ½ tsp garlic, minced
Preparation:
- Place you frozen chicken thighs in the Instant pot.
- Add 2 cups of chicken broth.
- Secure lid and pressure cook on high for 8 minutes. Quick release when finished.
- Remove thighs and cut into chunks or shred if you prefer.
- Return chicken to instant pot and add in all veggies, remaining cup of broth, milk, cream of mushroom, and seasonings.
- Replace lid. Pressure cook on low for 3 minutes. Allow to naturally release for 5 minutes.
- Carefully release remaining pressure, stir, and serve!
Delicious with Biscuits
A few southern style biscuits are always delicious with this easy to make instant pot chicken pot pie soup. Butter them up or use the to dunk. Either way, they make a nice filling side and mimic the pie crust nicely. If your kids are more creative with their food (yep, I have one of those), the thicker chicken pot pie soup is yummy in a little sandwich-style biscuit. My son loves stuffing the thicker pot pie soup right into the biscuit and eating it. Be warned – it can get a bit messy when they’re younger, but it’s delicious none the less!
