Spicy Shredded Chicken Tower Appetizer
I’m a huge fan of sushi towers, whether as a meal or an appetizer. There’s just something so appealing about the layer of colors and the whole presentation. While I’m a huge seafood fan, I realize not everyone shares that love. So, when I found out last minute the guest I had dropping by did not eat seafood, my appetizer tower quickly turned into a spicy shredded chicken tower instead! I have to say, while not quite as colorful, it was just as tasty and so easy to make!
Here’s What You’ll Need:
Ingredients for Spicy Shredded Chicken Tower Appetizers
- 2 chicken breasts or 4 thighs, frozen
- 1 can Rotel tomatoes and green chile
- 1/2 cup chicken broth or water
- 1 packet taco seasoning
- 1 small lime
- ground cumin, salt, and pepper to taste
Preparation:
- In an instant pot, add chicken, Rotel, chicken broth/water, and taco seasoning. Seal instant pot and pressure cook on high for 12 minutes.
- When cooking is complete, naturally release for 10 minutes, then quick release.
- Remove chicken and shred with forks or meat shredders. Return chicken the pot and allow to soak up the juices.
- Squeeze 1 lime into the chicken mixture and stir. Add ground cumin, salt, and pepper to taste.
- Prepare steamed rice.
- Use a small ramekin or similar dish to mold rice into a small tower. Press firmly to hold rice shape together. Flip it onto the center of your appetizer dish and tap to help release.
- Top the steamed rice with the spicy shredded chicken mixture. Pile the chicken, tomatoes, and chiles on top, allowing the juices to flow through the steamed rice.
- Serve immediately.
Leftover Ideas
Spicy shredded chicken is ideal for leftover dishes. We love the flavor the next day, as it’s had a chance to really soak up all the flavors. Our favorite dishes to make with the leftover spicy shredded chicken are:

- shredded chicken soft tacos
They are quick and easy and make the perfect lunch or dinner the next night. Just add a bit of cilantro and sour cream!
