Creamy Salmon Vegetable Medley

I’m a huge fan of grilling salmon filets, but when Texas weather has you cooped up indoors, it’s nice to have a backup recipe! If you’re looking for a delicious new recipe for your next salmon dinner, I have one you’ll love! It’s a light, flavorful cream sauce full of my favorite vegetables, poured over a bed of pasta and salmon filet. This creamy salmon vegetable medley may just be your favorite meal yet!

Here’s What You’ll Need:

Ingredients:

  • 4 salmon filets
  • 2 tbsp olive oil
  • 1 tbsp garlic, minced
  • 3 tbsp butter
  • 1 cup diced tomatoes
  • 1 cup sliced mushrooms
  • 2 tsp salt
  • 1 tsp pepper
  • 1 1/4 cup heavy whipping cream
  • 1/4 cup parmesan cheese
  • 1/4 cup chopped spinach
  • 1/2 lemon

Preparation:

  • Boil your pasta of choice while you prepare your salmon and cream sauce.
  • In a large pan, heat oil on medium.
  • season your filets with salt and pepper, then place in the pan. Sear each side for roughly 2-3 minutes. Your filet thickness will determine cook time, but be careful not to overcook.
  • Remove filets and set aside.
  • In the same pan, add in butter nad garlic. Saute for a minute before adding tomatoes and mushrooms.
  • Saute vegetables for several minutes, then add in spinach and cream.
  • turn heat to low and simmer, stirring occasionally. Add salt and pepper to taste.
  • Add in parmesan cheese, and stir occasionally as sauce thickens slightly.
  • Return your filets to the pan to heat for 1-2 minutes.
  • Squeeze lemon into the sauce or slice lemon and place as a garnish.
  • Serve on a bed of pasta (or rice) and coat generously with your creamy vegetable sauce.
