Broccoli ‘n Bacon Garlic Noodles

Sometimes you just need a go-to pasta recipe that’s big on flavor without the heavy sauce. While I love a good creamy pasta sauce, there’s something just as satisfying with a light sautéed garlic sauce that hits the spot and lets the ingredients steal the show! This week, we enjoyed broccoli ‘n bacon garlic noodles with plenty of leftovers that were just as tasty for lunch the next day!

Here’s What You’ll Need:

Ingredients for Broccoli ‘n Bacon Garlic Noodles:

  • 1 16oz box spaghetti
  • 2 strips of bacon
  • 2 cups of broccoli florets
  • 1/2 cup olive oil
  • 2 tbsp minced garlic
  • salt and pepper to taste
  • parmesan cheese to garnish
  • chopped parsley to garnish

Preparation:

  • In a large pot, boil your spaghetti noodles.
  • Cut bacon into pieces.
  • In a large sauté pan, cook up your bacon until slightly crisp. Remove and set aside.
  • `Use bacon drippings and a small amount of oil to sauté garlic for several minutes.
  • Add in broccoli and continue to sauté for 2-3 minutes.
  • Remove broccoli and garlic and set aside with bacon.
  • Add approximately 1/2 cup of the pasta water to the sauté pan with the remaining bacon drippings and the rest of your oil.
  • Drain pasta and add to sauté pan, blending until completely coated with the liquid/sauce.
  • Add in bacon, broccoli, and garlic and fold into pasta.
  • Top each plate with parsley and parmesan cheese before serving.

Spice Up Your Broccoli ‘n Bacon Garlic Noodles

This recipe is already light yet flavorful, but if you like a bit of spice, you’re not alone. Try adding a sprinkle of red pepper flakes to the pasta for a bit of a kick. It also adds an extra pop of color if you’re serving guests and thinking about presentation!

Add a Bit of Shrimp or Chicken

If this Broccoli ‘n Bacon Garlic Noodles dish isn’t quite hearty enough for you, I highly recommend sautéed shrimp or a tender chicken breast. Either make a delicious addition to the tasty recipe and heat up well the next day.
