Creamy Salmon Vegetable Medley
I’m a huge fan of grilling salmon filets, but when Texas weather has you cooped up indoors, it’s nice to have a backup recipe! If you’re looking for a delicious new recipe for your next salmon dinner, I have one you’ll love! It’s a light, flavorful cream sauce full of my favorite vegetables, poured over a bed of pasta and salmon filet. This creamy salmon vegetable medley may just be your favorite meal yet!
Here’s What You’ll Need:
Ingredients:
- 4 salmon filets
- 2 tbsp olive oil
- 1 tbsp garlic, minced
- 3 tbsp butter
- 1 cup diced tomatoes
- 1 cup sliced mushrooms
- 2 tsp salt
- 1 tsp pepper
- 1 1/4 cup heavy whipping cream
- 1/4 cup parmesan cheese
- 1/4 cup chopped spinach
- 1/2 lemon
Preparation:
- Boil your pasta of choice while you prepare your salmon and cream sauce.
- In a large pan, heat oil on medium.
- season your filets with salt and pepper, then place in the pan. Sear each side for roughly 2-3 minutes. Your filet thickness will determine cook time, but be careful not to overcook.
- Remove filets and set aside.
- In the same pan, add in butter nad garlic. Saute for a minute before adding tomatoes and mushrooms.
- Saute vegetables for several minutes, then add in spinach and cream.
- turn heat to low and simmer, stirring occasionally. Add salt and pepper to taste.
- Add in parmesan cheese, and stir occasionally as sauce thickens slightly.
- Return your filets to the pan to heat for 1-2 minutes.
- Squeeze lemon into the sauce or slice lemon and place as a garnish.
- Serve on a bed of pasta (or rice) and coat generously with your creamy vegetable sauce.
