Spicy Ground Beef Enchiladas

I often make shredded chicken enchiladas but decided we needed a change this week. A spicy ground beef enchilada plate with tons of melted cheese just sounded like the perfect dinner choice. They’re easy to make and taste great with your preference of red or green enchilada sauce and a side of sour cream!

Here’s What You’ll Need:

Ingredients for Spicy Ground Beef Enchiladas:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 2 tbsp favorite spicy seasoning ( I use 6 Pepper Spice)
  • 1 pack small corn tortillas
  • 2.5 cups red enchilada sauce
  • 2 cups shredded mozzerella cheese
  • sour cream

Preparation:

  • Preheat oven to 375 degrees.
  • Lightly coat with enchilada sauce.
  • In a large skillet, cook beef, adding in taco seasoning and spices when almost done cooking.
  • Drain fat carefully and return to stove.
  • Add in approximately 1 cup of enchilada sauce and mix well.
  • Pour remaining sauce onto a deep plate or large bowl and dip your tortillas into the sauce one at a time as you roll each enchilada.
  • You will dip a tortilla, place it in your pan, layer with cheese, a heaping scoop of beef, then roll or fold your tortilla. Repeat until baking dish is full.
  • Top your enchiladas with remaining sauce and cheese.
  • Bake for 20 minutes or until cheese is melted.
  • Remove and serve with a side of sour cream!

Tasty Sides for Your Spicy Beef Enchiladas

Fair warning – we aren’t very adventurous when it comes to our enchilada and taco side dishes! We love our refried beans topped with melted cheddar cheese and a scoop of Spanish rice. In fact, you may want to try our warm taco dip recipe! There’s just something about a the combination that’s too good to mess with.
