Crazy Good Coconut Pound Cake

I love coconut and a few weeks ago I had a piece (or two) of a delicious pound cake my cousin made. Last week while visiting her family we decided to make the cake ourselves and the results were delicious. It was easy to make and we had all the ingredients handy. By the time it was done the whole house smelled good enough to eat, but we only ate the cake!

Coconut Pound Cake

Ingredients:

I cup margarine (we used butter)

1/2 cup shortening

3 cups sugar

6 eggs

1 teaspoon coconut flavoring

1/2 teaspoon almond flavoring

3 cups plain flour

1 cup milk

1 cup coconut

Steps:

Cream butter, shortening and sugar together.

Add eggs one at a time-beating well.

Add flavorings to mixture.

Add flour and milk alternately.

Stir in coconut.

Pour into prepared bundt pan.

Bake at 350 for one hour and fifteen minutes.

Stays moist and delicious if kept in air tight container.

Or you can eat it all the first day and not have to worry about the air tight container!

  2. This recipe is perfect for me. Sometimes my grands call me Nana Coconut!?!? I will give this a try. I have a recipe for poppyseed cake that used coconut pudding instead of lemon that is really good, too. ????
