Coconut Layer Cake and a very fun egg hunt!

Yesterday I took three of my five grandchildren to a friend’s egg hunt and we had so much fun! These are the super-duper egg hunters who participated. Aren’t they cute?

Before they hunted eggs they were fed at little tables just their size. Everything was decorated with little ones in mind!

This little cutie is one of the host and hostess’s children and she was so excited to have the egg hunt at her house.

My grandson enjoyed the food and he didn’t even complain about having to sit with girls. For awhile I thought he was going to be the only boy there but one more showed up!

They loved taking the eggs apart to get the candy inside. As you can see, my grandson got a lot of eggs. He found about 80 but one little girl had over 100 so he didn’t get the prize for the most eggs but he did get a whole lot of candy!

This Coconut Layer Cake was delicious. I liked it so much I asked the lady and her husband (both of them made it) if I could share the recipe with you. The cake tasted even better than it looks and that’s hard considering it’s decorated so beautifully!

Recipe:

2 Cups granulated sugar

12 oz. sweetened shredded coconut

1 (8 oz.) container sour cream

1 15.25 pkg. butter golden cake mix

1 (8-oz.) container frozen whipped topping thawed

  1. Prepare the coconut cream filling: Stir together sugar, shredded coconut and sour cream in a bowl, cover and chill for 2 hours.
  2. Line the bottom of 2 (8 in.) round cake pans with parchment paper and spray sides and bottom with vegetable cooking spray. Prepare the cake mix according to package directions. Divide batter evenly between the 2 cake pans’ bake as directed. let cool completely.
  3. Cut each cake layer in half horizontally using a serrated knife making 4 even layers. Place one layer cut side up on platter. Stir chilled coconut filling, remove and reserve one cup for icing. Spread about one cup of the remaining coconut filling over the top leaving a 1/2 inch border. Top with another cake layer and repeat layers twice, beginning with c. filling and ending with cake layer.
  4. Stir together whipped topping and reserved 1 cup coconut cream filling, spread on top and sides of cake. Chill cake for at least 24 hours.
