Spinach and Tomato Mac and Cheese Recipe
Sometimes making mac and cheese for the kids over and over can get a little boring. Can you relate? We’ve recently switched to trying white mac and cheese recipes and loving the change. While the kids still prefer their mac and cheese plain, I started tossing in different ingredients into leftovers as a snack for myself. My favorite so far? Spinach and tomato mac and cheese! It’s quick, easy, and gets those veggies in!
- Cook your pasta as you prepare your sauce
- On medium heat, melt butter
- Stir in flour slowly, whisking for 1 minute
- Slowly add in milk and continue to whisk until smooth
- Simmer mixture for roughly 5-7 minutes
- Add cream cheese and parmesan cheese and whisk until smooth
- Add spinach and tomatoes to your sauce and continue to simmer as spinach wilts
- Season to taste
- Add pasta and blend well
Here’s What You’ll Need:
- 1 box of your preferred pasta
- 4 tbsp butter
- 3 1/2 tbsp flour
- 2 cups of milk
- 2 cups of spinach
- 1 cup of diced tomatoes
- 1/4 cup of cream cheese
- 1/2 cup parmesan cheese
- salt, pepper, and garlic powder to taste

Leftovers
If you’re lucky enough to have leftovers, here’s a helpful suggestion for reheating. The sauce will thicken upon standing and more so in the fridge. I add a few tablespoons of milk and a bit of butter before popping the leftovers in the microwave to help. Alternatively, you could add this to your leftovers before putting it in the fridge, since you’ll have all your ingredients out from cooking.
