Blueberries and a Poke Cake
We are blueberry farmers, (read about our farm by clicking here) and it’s picking season. That means everyone in my family is extremely busy, including me. I’m the delivery nana. I told my son I wanted to get a bright blue Volkswagen Bug and hitch up a trailer to it. Then I would buy a tiara and crown myself Blueberry Queen. Wouldn’t that be a great way to advertise our delicious blueberries?
I love fresh blueberries on my cereal every morning and because they are a superfood, I try to eat as many of them as I can!
Our church had a potluck a few Sundays ago and a good friend sent me a recipe for a Blueberry Poke Cake. I took that as I hint (since she would be there) and made the cake. It was delicious and gobbled up quickly. I’m not sure blueberries are as good for you when they are surrounded by sour cream, whipped cream and cake, but they sure do taste good that way!
The recipe came from a website and I’m providing a link for you here so you can find it. Their cake was solid white on top. I got some of the blueberry sauce mixed into mine but since I loved the color I decided just to go with it and made swirls around the cake. It reminded me of watching my grandmother churn butter and then take a knife and make patterns on the cake.
I told my son I had made Blueberry Poke Cake and he thought I said Blueberry Polk Cake. My grandmother cooked polk so he knew what it was and none of us like it. He was very relieved when I told him it was “poke” not “polk.”
Are you a blueberry fan? If you aren’t, you should be! We have a Facebook page too!
She will LOVE poking the holes in it and eating it!
Granddaughter Madeline is going through a phase where all she will eat is blueberries. We may need to make a trip to Kentucky to see Nana!
