Mom’s Italian Spaghetti

When my brother and I were young my mom enrolled in college. She met an Italian lady in one of her classes and asked her for some recipes. The lady said sure, but because she was a busy mom/college student too, she said she was going to give my mom the easy versions of lasagna and spaghetti. We have loved both recipes since Mom began making them during the 1970’s. I make them still and have shared them with friends and family many times.

When mom was a little girl Grandma and Grandpa grew a huge garden and fed her and her brothers meat, potatoes, veggies, biscuits and homemade desserts. They had never heard of spaghetti, lasagna or pizza. During the 30’s and 40’s they did good to survive and they would never have dreamed of going to a restaurant if there had even been any nearby.

This spaghetti sauce can be made so fast it’s unbelievable.

But is it good?

I NEVER have more than a spoonful left when I make it and I feed a LOT of people.

If You Have To Feed An Army

We raised 4 boys and a girl who brought home friends and cleaned my refrigerator out at least once or twice a week. Now I have grandchildren with growing appetites. When I make spaghetti sauce now I sometimes feed as many as 15 or more.

I have made it so many times I can now triple the recipe without any trouble. The only problem is to make as much as it takes to feed my expanding family costs a small fortune!

Getting Ready to Make Mom’s Italian Spaghetti

There aren’t that many ingredients required to make this but when I checked my pantry I was out of several items. Our little town has 2 small grocery stores. I wanted to serve garlic bread and salad with the spaghetti. I got most of the items at one store but they were out of some things. I shopped at both groceries and spent a little over $100 for one meal! Good gravy that’s too much $$$$!

I don’t know what we are going to do if grocery prices keep going up! Farmers aren’t making more, so the money has to be going to the middle man. Someone needs to stop this nonsense before we all end up in the poor house. If you don’t know where the poor house is I remember asking my grandfather and he assured me that there was a house labeled Poor House somewhere. He seemed certain he and my grandmother would end up living there.

Maybe I should have called this post Million Dollar Spaghetti! FYI–I have another sauce recipe that just a tad more complicated here but just as good!

Ingredients (enough for one 4 person family) for Mom’s Italian Spaghetti (Double or Triple according to number you want to feed.)

1 green pepper, 1 onion, 1 pound ground beef, 2 cans tomato soup, 1 can mushrooms (or you can use fresh), 1 box spaghetti noodles, Salt, Pepper, Italian seasoning, 5 pieces sliced cheese, 1 large jar of Ragu spaghetti sauce with meat (I have used Prego with meat)..

Chop green pepper, onion, and put in bowl, brown hamburger until all pink is gone. Add green pepper and onion and then drain. Drain mushrooms and add to mixture. Add a teaspoon of salt and teaspoon of pepper. tablespoon or two of Italian seasoning. Mix all together. Add tomato soup. After it bubbles turn down and melt 5 slices of american cheese on top and stir into it. Add parmesan cheese on top if desired and serve over noodles. (Boil noodles in water with teaspoon salt for 7 minutes and drain). Gobble it up!

This takes maybe 30 minutes and can feed a bunch. Just make sure to double and triple if you have a big family.
