Sweet Italian Sausage & Kale Pasta
I was browsing through soup recipes the other day when Texas was having another “is it spring or is it winter” spell. Soup sounded so good and I came across a sweet Italian sausage recipe that intrigued me. Fast forward a couple days and it’s warm and sunny again. That’s Texas for you! So instead, I put the Italian sausage to great use by whipping up a delicious penne pasta dish with kale, diced tomatoes, and lots of garlic.
Here’s What You’ll Need:
Ingredients:
- 1 lb mini penne pasta
- 1 lb sweet Italian sausage
- 1 1/2 tbsp olive oil
- 1 tbsp garlic, minced
- 1/2 cup yellow onion, diced
- 1 can diced tomatoes (or fresh but I utilize the extra juices)
- 1 1/2 cups fresh baby kale
- 1 tsp salt
- 1 tsp pepper
Preparation:
- Prepare your chosen pasta
- Add 1 tbsp oil to your saute pan and saute onions and garlic
- Add in sweet Italian sausage and cook over medium heat
- Reduce temp to low and add in tomatoes and kale, cover, and let steam cook the kale (3-4 minutes)
- Remove and add to pasta, garnishing with Parmesan cheese.
Simple Pasta Recipe
I loved how quickly the whole recipe came together. I can easily create variations by tossing in my favorite vegetables during the saute to add more flavors or coloring to the dish. If you prefer more of a spice kick, sprinkle a few red pepper flakes in with your Parmesan.
