Blueberry Bars

My friend Peggy is a wonderful cook. When she comes over for a visit she usually brings something delicious with her. I’ve told her that she doesn’t have to bring food with her every time she comes to my house, but it doesn’t do any good. She loves to cook and she loves to watch our grandchildren devour whatever she brings!

Of all the goodies she’s brought with her I think my favorite is her Blueberry Bars.

These were made with blueberries from our farm (Bellview Blueberries) and that made them even more delicious!

The taste reminds me of cobbler but it’s better than that because of a few extra special ingredients. Peggy has had this recipe since the early 70’s and it was originally a recipe for Rhubarb Bars. She says she has made them with every kind of fruit and they are always delicious. I don’t see how any other fruit could be as good in them as blueberries but I trust Peggy so I believe her.

Peggy, if you are reading this please don’t bring me Rhubarb Bars….I prefer the blueberry! They are melt in your mouth delicious!

Blueberry Bars

Peggy’s Blueberry Bars

Crust: 1 cup flour, 1 stick butter, 5 tablespoons powdered sugar. Blend to pea size with a pastry blender. Press into 9 x 13 dish after you have sprayed bottom of dish with non-stick spray. Bake at 350 for 10 minutes.

Filling: 8 ounces softened cream cheese, 2 eggs (beaten), 1/2 teaspoon salt, 1 1/2 cups sugar. Blend well and stir in 2 cups of blueberries. Pour over crust.

Topping: Same as Crust. Sprinkle onto berry filling and bake for 30 to 35 minutes.

Cool and refrigerate leftovers.

  5. Those look scrumptious! I had homemade blueberry muffins at a party yesterday whose berries had just been picked that morning.

  6. I could see this as a cobbler or a rhubarb bar recipe. It makes it sooo much better being from your farm. These and lemon bars are my ab favs. Perfect for the Fourth, top with a red berry compote and whipped cream.
