Macaroni Casserole

I’ve made this casserole so many times I could put it together with a blindfold on and one hand tied behind my back. My grandmother’s sister, my great-aunt Ruth, was the first one in our family to make it and it quickly became a family favorite.

When I’m invited to potlucks I’m often asked to bring macaroni casserole. My family expects it at every special occasion, especially Thanksgiving and Christmas. It isn’t hard to make and I usually double the ingredients because I have so many to feed.

There are foods that are so ingrained in our memories that just smelling them cook can conjure up images and scenes from our past. I can see my mother and grandmother and great-aunt all working together in the kitchen to prepare a huge meal every time I cook this special dish.

Macaroni Casserole

(This makes enough for 6 people. I double it to feed my huge family!)

Boil two cups elbow noodles according to directions and drain.

Add half a chopped onion and half a chopped green pepper.

2 tbs. butter

1 can mushroom soup

1 can drained mushrooms

1/2 cup mayo

1 cup shredded mild cheddar cheese

1/2 tsp to 1 tsp salt

mix until butter, cheese and soup have well blended with other ingredients

thin mixture with a little milk

Pour into greased shallow baking pan and cook at 350 for thirty minutes or until mixture is bubbly throughout.

  1. No, my Aunt Ruth was my great-aunt and she died years ago. She married a Simmons and some of her husband’s descendants live in Glasgow. Thanks for commenting!

  2. That’s a different mac casserole. Sounds delicious. Wondering if this might be the Ruth I know that lives in Glasgow. The lady is well into her 90s and can run circles around me.
