Teriyaki Chicken Bowl
If you’re looking for a delicious, easy to make chicken recipe, there’s nothing tastier than a teriyaki chicken bowl. While you can certainly simplify this recipe by using your favorite teriyaki sauce, I highly recommend trying this simple blend. If you’re lucky enough to have leftovers, the teriyaki marinade is almost better the second day!
Here’s What You’ll Need:
Ingredients:
- 2 cups rice
- 1 lb chicken (I prefer thighs)
- 1/4 cup soy sauce
- 1/2 cup pineapple juice
- 1/3 cup brown sugar
- 1/8 cup ketchup
Preparation:
- In a medium bowl, mix together soy sauce, pineapple juice, brown sugar, and ketchup. Stir until sugar dissolves.
- Cut your chicken into bite-sized pieces and marinate in the fridge for at least an hour. The longer, the better!
- When ready to cook, steam your white rice. I prefer the instant pot method (2 cups rice, 2 cups water for 4 minutes on high pressure)
- On medium-low heat, cook your chicken and marinade. Stir occasionally. Chicken should cook in approximately 5-7 minutes.
- Serve chicken and teriyaki sauce over a bowl of rice and enjoy!
Adding Additional Flavor
When I’m craving a bit more flavor, I add 1 cup of pineapple chunks into my teriyaki marinade and a handful of red onion slivers. They cook well with the chicken and add a touch of extra flavor to the dish. Play around with your marinade ratios if you prefer your teriyaki a little less sweet. I recommend adding a tad more soy sauce or a few dashes of water to the mix to tone it down.
