Passionately Pink for a Cure

Well I decided to go ahead and try my first batch of “Cupcakes for a Cure.”
I did half chocolate and half vanilla. The icing is made from cream cheese, powdered sugar, butter and vanilla, with just enough red food coloring to turn them pink. I had to test one of course, just to make sure they were okay.
And they were. I sold them all (except the ones my boys ate when they thought I wasn’t looking).
One batch down and a few more to go.
We’re getting closer to October and Breast Cancer Awareness month. Ingredients
* 2 (8 ounce) packages cream cheese, softened
* 1/2 cup butter, softened
* 2 cups sifted confectioners’ sugar
* 1 teaspoon vanilla extract
Directions
1. In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners’ sugar. Store in the refrigerator after use.
Definitely a great idea. Would love the recipe for the frosting, it sounded great!
