Blueberry Pancake Pastry Recipe
I know how much we all love blueberries here at NanaHood, so as I started to make this tasty pancake pastry recipe with my usual strawberry filling, I decided to switch it up a bit. This is a great recipe for breakfast, brunch, or snack. It’s light, fluffy, sweet, and fast!
Here’s What You’ll Need:
Ingredients:
- 1 1/2 cups of pancake mix
- 1 tbsp of sugar
- 1 cup blueberries
- 1 cup water
- powdered sugar or desired toppings
Preparation:
- Pre-heat oven to 350 degrees
- Mix pancake mix, sugar, and water in a large bowl until smooth
- Fold in your blueberries
- Grease a cake pan thoroughly
- Bake for 18-22 minutes
- Garnish with powdered sugar or additional blueberries and serve
Favorite Blueberry Pancake Pastry Toppings
The kids love this in place of traditional pancakes and often eat it dipped in syrup. It’s also delicious with a scoop of cool whip and additional blueberries sprinkled on top. you can also enjoy it with a blueberry glaze or pie filling lightly drizzled over it for extra sweetness.
