Chocolate Chip Cookie Cake

I can’t wrap my head around my oldest turning seventeen. If I’m being completely honest, I feel this way every year, at each of their birthdays. They really do grow up too fast. And somewhere along way, both of my kids developed a preference for something other than the tradition birthday cake. So, this year, my son had a craving for a chocolate chip cookie cake “like they have at the mall.”

I knew exactly what he was referring to, so I got to work. Now I do have to warn you, we were celebrating at their dad’s for a few days, which meant I was without my stash of fun frosting colors and tools. I am also, by no means, a cake decorator. Stick figures are more my pace! So, pay no attention to the design!

Here’s what you’ll need:

Ingredients:

  • 3 cups of all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup of softened butter
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 1/2 teaspoons of vanilla extract
  • 2 eggs
  • 2 cups of mini milk chocolate chips
  • frosting

Preparation:

  • Preheat oven to 350 degrees
  • Line a cookie sheet (13×18) with parchment paper and set aside
  • Mix your softened butter and sugars in a bowl until smooth
  • add in your vanilla, salt, and eggs and continue to mix
  • Slowly add your flour and baking soda until mixed in
  • Fold in your chocolate chips
  • Spread the dough onto your cookie sheet evenly, pressing lightly with your fingers or a rubber spatula, until flat and corners of your sheet are filled in
  • Bake for 20 minutes – due to oven variations, check at 20 minutes with a toothpick and adjust time needs accordingly
  • I like to switch the oven to broil for 2 minutes to lightly brown the top and edges of the cookie before taking it out. This is completely optional but keep your eye on it if you choose this final step!
  • Allow chocolate chip cookie cake to cool completely before decorating

Frosting Fail

See….lack of available food coloring and decorating skills, but still a delicious birthday cookie cake! While we had a good laugh, our mouths were soon too full to care.

Storing Your Chocolate Chip Cookie Cake

Depending on how quickly you may finish your cookie cake, you can simply cover it with plastic wrap or foil to keep it fresh. Since we had some driving to do a few days later, we tucked several pieces in a zip lock bag and it is still fresh and being nibbled on. You can also a portion if you don’t intend to finish it all for a while.
