Nana’s Cheesy Hash Brown Casserole

We were having company for supper and I needed to feed a lot of people. I didn’t want to spend all day in the kitchen and didn’t want a vast amount of clean up. After giving it some thought I decided to serve barbecue pulled pork sandwiches, baked beans, squash and my cheesy hash brown casserole. I also sliced up some tomatoes and cucumbers.

We are starting to get squash and tomatoes from out green house and they are delicious. Just because our farm is a blueberry farm doesn’t mean we raise only blueberries, although we do have a ton of those in the month of June at Bellview Family Farm.

Our guests arrived and with my husbands help (he picked up the barbecue at Big Man’s BBQ in Glasgow) I had enough food to feed a small army prepared.

Nana’s Cheesy Hash Brown Casserole goes great with baked beans and they are easy to make. Because I feed a lot of people and those people are very big (the twins are 6 foot 8 in.) and they all have large appetites I have learned to double and triple recipes. This recipe is enough to feed ten or more easily.

Cheesy Hash Brown Casserole

What you will need….

A large pan. I used my lasagna dish and filled it full.

A large mixing bowl.

2 packages of frozen hash browns thawed.

Salt and pepper.

1 onion

1/2 package shredded mild cheddar cheese

two cans condensed mushroom soup (or two cans condensed chicken soup)

1 large container sour cream.

What you need to do…

Preheat oven to 350 degrees.

Chop up one small onion.Mix everything in bowl until its all mixed together and pour in greased pan. Mixture will be thick. Really thick.

Pour into greased dish and spread out until smooth. Sprinkle some extra cheese over the top.

Bake for about an hour or until it’s bubbly in the center.

This dish, the beans and the BBQ compliment each other so well I think I’ll take some left overs to my friend’s house today. Yes, there were some leftovers but all the squash was gobbled up. FYI- A good time was had by all. This photo is of my husband and one of our sons. They are talking to Dorothy, who was like a second mom to my 5 children and was here visiting from Texas with her son and his family. It was so much fun seeing them and we hope they come back soon!

    I’m going to stick to the top photo cuz your cheesy casserole is killing me. And such good directions and images. I heard about a delicious mac and cheese lasagna this morning, I better stop thinking about cheese, lol.
