Tasty Hawaiian Macaroni Salad Recipe
We celebrated a 1st birthday this week with a luau theme, complete with Hawaiian family recipes! The favorite by far was the Hawaiian Macaroni Salad…. or perhaps it was just the heat that drew everyone to it! Either way, side dishes are always a great way to compliment the meal you’re making. Sometimes I get stuck in a rut and turn to the same, boring side dishes as an easy fix. So, if you’re like me, and looking for a tasty new side dish to try, you’ll love this Hawaiian Macaroni Salad recipe. It’s easy to whip together and always a crowd pleaser. I remember growing up having this side dish with many of mom’s traditional Hawaiian and Filipino dishes. It was a delicious side we never seemed to get enough of and leftovers were rare in our house.
Here’s What You’ll Need:
Ingredients:
- 16oz elbow pasta
- 1/2 onion, chopped
- 2 1/2 tbsp apple cider vinegar
- 1/2 cup milk
- 2 1/4 cups mayonnaise
- 1 tbsp sugar
- 1/2 cup shredded carrots
- salt, pepper, garlic powder to taste
Preparation:
- In a large pot, prepare your elbow pasta.
- In a large mixing bowl, prepare your mayo and season.
- Add in cooked pasta (about a quarter at a time) and blend well.
- Sprinkle in onions and carrots as you blend mayo mix and pasta.
- Cover and refrigerate pasta for at least a couple hours before serving. I like to prep it the night before and chill overnight.
