Comfort Food at NanaHood

I wanted something different for supper tonight. I was tired of cooking the same things I always cook, so I dug around a little bit and found a recipe that I thought sounded yummy.

I was right. It was very good. My boys are a tough sell when it comes to casseroles, but they loved it. If the Kindred boys like a chicken casserole, you can be assured it’s good! They all came back for seconds and one even came into my room later and said, “Thanks for supper mom, it was awesome.”

That usually only happens on Thanksgiving and Christmas!

 

Ingredients

4 skinless, boneless chicken breast halves

6 ounces egg noodles

1 can cream of mushroom soup (I used the 98 percent fat free)

1 can cream of chicken soup (used the fat free on this)

1  cup sour cream (used the light sour cream)  No one noticed that I cheated on the side of good health!

salt to taste

pepper to taste

1 cup crumbled buttery round crackers

1/2 cup butter

Directions

Boil chicken until no longer pink in center. Remove from pot and set aside. Bring chicken cooking water to a boil and cook pasta in it. Drain. Cut chicken into small pieces and mix with noodles.

In a seperate bowl, mix together mushroom soup, chicken soup, and sour cream. Season with salt and pepper. Gently stir together cream soup mixture with the chicken mixture. Place in a 2 quart baking dish.

Melt butter in a small saucepan, and remove from heat. Stir in crumbled crackers. Top casserole with the buttery crackers.

Bake a 350 for about 30 minutes.

Some Really Good News!

From my cousin Martha about her breast cancer:

Saw the doctor and it’s all good news! Cancer markers are continually going down and are normal! Cancer is still there but is the same or lightly smaller. The goal is to have no growth. I do have osteoporosis and will start Fosamax for that and he wants me to see my dentist or oral surgeon about my jaw that has been locked for two months… But that’s minor tome! We come back in four months! Thank you for your prayers. Now send one up of thanksgiving please!

  1. This sounds great and if they will eat it, I think I will try it out on Mason tonight. I’ll tell him your boys ate it and maybe he will try it. I do have a beef with them, though…who left the cornbread on their plate??? Mason would have snatched that up in two seconds flat. hahaha!
