Buttermilk Cinnamon Muffins
My sweet tooth seems to be hooked on cinnamon lately. I had a craving for buttermilk cinnamon muffins the other day, and while this heat keeps me away from the oven most days, my sweet tooth won this round! So, I pulled out an easy buttermilk cinnamon muffin recipe and whipped up a batch for breakfast.
Here’s What You’ll Need:
Ingredients for Buttermilk Cinnamon Muffins:
- 2 cups flour
- 4 tsp baking powder
- 2 1/2 tsp cinnamon
- 1 1/4 cup sugar
- 1 tsp salt
- 2 large eggs
- 2 tsp vanilla extract
- 1/3 cup vegetable oil
- 1 cup buttermilk
- 3 tbsp butter
Preparation:
- Preheat the oven to 400 degrees.
- In a mixing bowl, combine eggs, oil, vanilla, and buttermilk. Blend until smooth.
- Mix in flour, baking powder, salt, cinnamon, and sugar. Mix until smooth.
- Lightly coat your muffin tin or line with muffin cups. Fill roughly 2/3 full.
- Bake for 10-12 minutes.
- Allow to cool before serving.
Topping Option
If you like a bit more cinnamon sugar on your muffin, you can mix up a little streusel topping to coat on top. This can be brushed on halfway through the baking or after you’ve finished baking. I’ve tried both and prefer halfway through, as it slightly caramelizes the butter for a yummy added taste!
Simply mix 1/4 cup of sugar, 2 tsp of cinnamon, and 2 tbsp melted butter in a small bowl. Then, lightly coat the top of each buttermilk cinnamon muffin with your mixture! That’s it!
