Blueberry Cake – So Easy To Make!

Here’s a blueberry cake that is so easy to make you will love this recipe!

My friend Peggy loves to make desserts and she loves to share them with us. Secretly I think she brings them over here so she doesn’t eat them all herself, but I’m not complaining and neither is anyone else!

We love blueberries and since we have a blueberry farm we have an abundant supply. Whenever we find a recipe that calls for blueberries we don’t have to go to the store….all we have to do is go to the freezer.

Lucky for us Peggy has blueberries in her freezer too and when she saw a recipe that called for cranberries she decided to substitute blueberries. The result was simply delicious!

It was so moist and tasty that I had a piece for dessert last night and another one this afternoon.

The only problem with this cake is that it’s addicting. My husband had it with his coffee this morning and he loves it too. It’s so delicious I know you will want to try it too so I’m sharing the recipe (not the cake…sorry…we ate it all).

Peggy’s Blueberry Cake

Ingredients

3 eggs

2 cups sugar

3/4 cup butter, softened

1 teaspoon vanilla

2 cups all=purpose flour

12 oz blueberries

Instructions

Preheat over to 350 and with a mixer beat the eggs with the sugar until slightly thickened and light in color. Beat about 5 to 7 minutes. Add the butter and vanilla and mis two more minutes. Stir in the flour until combined and then add the blueberries and stir to mis them.

Spread in a buttered 9 by 13 pan. Bake for 40 to 50 minutes or until a toothpick in the center of the cake comes out clean. Let cool completely.

  2. I do think blueberries are my favorite fruit. I have them almost every morning in my oatmeal. The cake looks fantastic but I should probably stick with muffins (portion control, you know 🙂 ).
