Pumpkin Oatmeal Cookies- 4 Versions for You to Choose From
Pumpkin Oatmeal Cookies
Fall is here and there’s nothing like some delicious Pumpkin Oatmeal Cookies to share with your grands. They will love the cookies and so will you! And an added bonus is the delicious smell that will come out of the oven while they are baking.
Here’s what you are going to need to do your baking ….all ingredients are listed below. Most of this you will already have in your pantry.
They look delicious even in the bowl, don’t they? Don’t you wish you could stick your finger in and take some out to taste?
Are you getting hungry yet? I am! Just looking at these makes my mouth water!
Are you ready for some football? Whoops, I meant are you ready to bake some cookies?
Turn your oven on 375 degrees.
Assemble 1 1/4 cup cup plain flour
1 tsp baking soda
Set aside
1 cup Crisco
1/4 cup sugar
3/4 cup packed brown sugar
1 can of pumpkin (15 ounces)
1 small vanilla instant pudding
2 eggs
4 1/2 cups instant oats
4 OPTIONS: Â 1 cup raisins or chocolate chips or nuts or all of these or for plain oatmeal cookies just leave out the pumpkin and use 3 1/2 cups of oats.
Cream together crisco and sugars and instant pudding. Mix well. Add pumpkin, stir in flour and soda. Add raisins, chocolate chips, nuts or a combination of whatever you like. Mix by hand, batter will be a little stiff.
Drop by teaspoon full onto parchment paper. Bake at 375 for 10 to 12 minutes, lightly brown on bottom.
Cool on wire rack.

Your recipe sounds delicious! I never added vanilla instant pudding to the oatmeal cookie mix before and I imagine it adds a nice flavor and tenderness to the cookie. I bake at high altitude (I live over 6,000 feet) so it is always an adventure as to how baked goods will come out for me.
