Poppa’s Pancakes

I can’t believe another week has flown by and that Thanksgiving is right around the corner. How did that happen? Anyway, one night this past weekend my husband made pancakes and as always, they were a hit. Our kids and our grandchildren love Poppa’s famous pancake breakfast! They like them hot off the griddle and we eat them so quickly that poor Poppa has to keep cooking them for a long, long time.

Because we have a blueberry farm most of the time we have blueberry pancakes. We didn’t this night, but I eat them every day on my cereal so I didn’t miss them too badly in my pancakes. I collect recipes that have blueberries in them and I have a “Blueberries Rock” board on Pinterest. I’d love for you to visit me there and follow me if you would like to.

This little one likes a little bit of pancake with her butter. She also likes syrup but prefers dipping her pancake into the syrup as opposed to pouring the syrup over the pancake. We always have Poppa’s Pancakes at night because after we eat them we all get sleepy! They are sooo filling!

There are two ingredients in these that might surprise you: Reduced-fat Ricotta cheese an Pompeian Olive Oil. I know, I know. Sounds weird but I promise they are great!

  3. Oh pancakes!!! Since hockey season started, we haven’t had a proper breakfast in ages. The little one starts his games at nine which means we are up and at em by 7. Ridiculous. Hopefully by summer, we’ll be able to have pancakes again! I love her outfit and bow!!!

  4. We are pancake lovers too! Sometimes my kids requests pancakes for dinner, and I’m like, sure! haha! Also, my 3 yr old son just noticed that you guys have the same dining chair as his grandma! 😉

  5. My middle one could live on pancakes..or maybe just syrup..my youngest also likes a little pancakes with her butter. 🙂
