Omelette Muffins

I’m not a big breakfast eater in the morning, but love making it. I know, I’m strange like that. But I also love having leftovers of certain breakfast items I whip up. One of those are my omelette muffins. They are delicious out of the oven and just as tasty re-heated later. They stay fresh for a couple days in the fridge too, so don’t be afraid to experiment and make a couple batches.

Omelette Variations

One of the best things about these little guys is the ability to customize each one if you want. By mixing in your choice of toppings last, you can make as many variations of egg omelette muffins as you want. In fact, with the kids and I craving different meats and veggies, I can easily throw together a breakfast that suits all of us. Bacon and cheese in a few, all veggies in a couple, and a little bit of everything in a few more. Done. All three of us get what we want! It’s also a kid-friendly meal to have them make with you.

Here’s What You’ll Need:

Ingredients:

  • 12 large eggs
  • 2 cups of shredded cheddar cheese
  • 6 strips of crispy bacon
  • 1/4 cup of diced tomatoes
  • 1/4 cup of diced onions
  • 1/4 cup of diced mushrooms
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp garlic powder

Preparation:

  1. Pre-heat your oven to 350 degrees.
  2. Spray a cupcake pan with non-stick cooking spray.
  3. Mix your eggs, cheese, salt, pepper, and garlic powder.
  4. Fill each cup approximately 3/4 full.
  5. Add in your desired amount of each topping per cup if you are creating various flavors of omelettes. If not, feel free to add all toppings into your egg mix before pouring your mixture into each cup.
  6. Place omelette mixture in the oven for 20 minutes.
  7. Let omelette muffins cool for 5 minutes before serving.

Additional Toppings and Sides:

Now, if you recall, I’m a huge cheese lover. I love top a few of my omelette muffins off with a bit of extra cheese as soon as they are out of the oven. I also enjoy mine with a side of salsa and a bit of sour cream. I try to mix up my toppings now and then and play around with flavors. One of my favorites is a Greek-style omelette with black and green olives, onions, feta and cheddar cheeses. It has a great zesty taste to it!
